      On the eve of its 5th anniversary, La Table de Montaigne, the gastronomic restaurant of the Palais Gallien Hôtel & Spa, opens a new chapter in its history with the arrival of talented and renowned Chef Oli Williamson. Having honed his skills in prestigious kitchens around the world, Oli Williamson, as chef of La Table de Montaigne, offers a vision of cuisine based on collaboration, product quality, flavor and respect for the environment. A unique opportunity to sample dishes with global influences. "At Palais Gallien Hôtel & Spa, I want to offer cuisine where guests appreciate not only the flavors, but also the ethics that permeate every aspect of the culinary experience."

      • With 28 covers, the La Table de Montaigne restaurant is open to all from Wednesday to Saturday, 12pm to 1:45pm, and Tuesday to Saturday , 7pm to 9:30pm.


      Chef Oli Williamson

      At 33, British Chef Oli Williamson, winner of the prestigious Roux Scolarship competition, arrives in Bordeaux after three years as Chef de Cuisine at The Fat Duck*** in Bray and two years as Pastry Chef at The Greenhouse** in London. His challenge: to share a personal and responsible interpretation of French gastronomic classics.

      "Having already worked in some of the best restaurants in the world, I feel the time has come to use the skills I've acquired to develop my own cuisine," confides the Chef, who is no stranger to expatriation.

      Having worked in the kitchens of the Benu*** restaurant in San Francisco and the Zén*** restaurant in Singapore, he is well-versed in mixing influences.

      It's an asset he'd like to use to "showcase French products and techniques". And it's with all the experience gained from the pop-up restaurant wastED, designed to raise awareness of the issue of food waste, that he hopes to: "Work with producers and colleagues who share a similar, conscious state of mind, as much as a passion for the best products".

    We did the seven course writing menu. My wife and I arrived a few minutes early and were seated promptly. It's a lovely and small space of about seven tables. The entire service was friendly, fast, and impeccable. The ladies made sure we were enjoying our food. The wine pairing - we allowed them to bring out any recommended wines from Bordeaux. The wine was great save for a slightly too sweet dessert wine. The food was amazing. The lobster was my favorite, followed by the pigeon and green pea salad. Dessert was a strawberry dish with a slightly savory sorbet. For the restless patrons like myself, I might suggest skipping the cheese plate. While delicious, it did seem to tack on an extra half hour to the dining experience. But that fault probably lies with me wanting to get up and walk and have a beer on our last night in Bordeaux.

    There is absolutely NOTHING to criticise - they deserve more than the one Michelin star Chef Younesse has under his apron. Each dish is crafted with so much attention to detail while respecting seasonality of the ingredients. We had the 3-course lunch menu at €39. As it’s mushroom season we started our meal with the most delicate ceps with a light foam cappuccino to wet your palette. Next came the roasted Guinea fowl breast with a light crispy crusted skin, that was so tender and juicy. The sides of puréed butternut was so smooth and the dish was rounded up with more mushrooms to give it an earthy punch. I could not stop myself from asking for more bread (served warm) to soak up the sauce. Honestly, even the bread is worth a mention - crusty outside but soft and fluffy on the inside and it’s sourced from a local bakery. Finally, the montblanc tart was a delight - delicate crispy crust contrasted with a light cream on chestnut ice cream. We ended the meal with a mini canalé on the house to complete our meal. The service was par excellence, especially from Etienne. He was attentive, friendly and even had Chef Younesse come speak to us so we can personally thank him for preparing a delicious meal.     Amazing. Excellent service. Very nice place. I tried the 5 course tasting menu for 64 Eur and it was really amazing. Highly recommended.
