Every Tuesday, Anaïs receives fresh whole fish, which are then hand-filleted and sliced with a knife. The fish is smoked by hand, either cold or hot, depending on the species. From reception to slicing, everything is done on site in his workshop in accordance with current hygiene regulations. In the smokehouse, only French fish (except salmon) and quality fish from the most renowned farms are used. We also work with wild fish from artisanal French fisheries. L'Atelier de Madame Poisson consists of two areas: the 40 m2 laboratory, perfect for artisanal fish smoking, and the boutique, where you can watch Anaïs at work. Welcoming and well-stocked, the Atelier de Madame Poisson boutique is a pleasure for both the eye and the palate. Each week, up to 4 recipes of fresh rillettes are offered. To complete her offer, Anaïs also cooks organic blinis and quiches in a variety of flavors (always with smoked fish and organic, local vegetables), as well as salmon-beet gravelax and salmon steaks smoked with Moon Harbour whisky from Bordeaux.
